Popeye Soup
Ingredients
- 2 packages of frozen chopped spinach
- 2 packages of frozen leaf spinach
- 4 large cans College Inn chicken broth
- 2 cups grated Pecorino Ramano cheese
- 8 Large eggs
Directions
- In a large pot pour all the chicken broth and all 4 packs of frozen spinach cook on medium heat until all spinach is separated
- in a separate bowl scramble 8 eggs. add the cheese to the eggs and scramble some more
- once egg and cheese is combined add to the soup.
- let cook on medium heat for 30 minutes stir occasionally
- serve with italian bread
